Transport your senses straight to the heart of New Orleans as Chef Sean McFadyen brings the soulful flavors of the Big Easy to Seattle. In this demonstration-style class, you’ll learn how to build a deeply flavorful crawfish étouffée from the ground up—starting with a rich, slow-cooked roux layered with the “holy trinity” of Cajun cooking, and finished with tender crawfish simmered in a velvety, spice-kissed sauce.
Along the way, we’ll explore the techniques that give this iconic dish its signature depth, balanced heat, savory richness, and that unmistakable Louisiana comfort. The star of the show: a luscious crawfish étouffée, where tender crawfish are smothered in a silky, deeply seasoned sauce that is rich with caramelized aromatics, gentle heat, and layers of savory flavor that soak beautifully into fluffy rice. After you watch and learn, you’ll get to make your own crawfish etouffee in a team of 2 people and make dirty rice in a group of 4 people to enjoy together when everything is done.
To serve alongside with your meal, there will be Succotash, Jalapeno and Cheddar Hush Puppies with Hot Honey, and Praline Bread Pudding with Bourbon Sauce and Vanilla Whipped Cream that will be prepared by the Hot Stove team.
Guests will be welcomed with Smoky Grilled Andouille Sausage paired with bright, tangy Pickled Okra, finished with Creole Salt and a creamy, zesty Remoulade to set the tone for a menu full of vibrant contrast and flavor.
