In this immersive cooking and tasting experience with Chef Bridget Charters, you’ll savor a seasonal menu that highlights the region’s depth and diversity: a delicate asparagus flan (Sformato d'Asparagi), vibrant spring vegetable lasagna (Lasagnette Primavera), rich stuffed capon (Cappone Ripieno), baked fennel with Parmigiano (Finocchi Parmigiana), and a bright lemon cake with zabaglione (Torta di Limone con Zabaione). Each dish is paired with regional wines and cocktails that elevate every bite, while you learn how Italians drink with purpose, matching each sip to the season, the dish, and the moment.

Cocktail Master Julie Ross brings Emilia Romagna’s spirited side to life with a trio of drinks that capture the region’s essence. Sip on a Lambrusco Spritz, a refreshing blend of Lambrusco, Aperol, grapefruit, and soda - perfect for aperitivo hour. Indulge in the bold complexity of the Nocino Negroni, featuring gin, nocino (a traditional walnut liqueur), sweet vermouth, lemon, and burnt lemon bitters. And of course, enjoy a glass of Sangiovese, the region’s beloved red wine, known for its bright acidity and food-friendly charm.
