In this demonstration-style class, you’ll learn how to build a deeply flavorful crawfish étouffée from the ground up—starting with a rich, slow-cooked roux layered with the “holy trinity” of Cajun cooking, and finished with tender crawfish simmered in a velvety, spice-kissed sauce.

Along the way, we’ll explore the techniques that give this iconic dish its signature depth—balanced heat, savory richness, and that unmistakable Louisiana comfort. You’ll watch as plump scallops are seared to a perfect golden crust, their naturally sweet, buttery centers paired with creamy, slightly smoky corn maque choux bursting with fresh herbs and peppers. Then, dive into the star of the show: a luscious crawfish étouffée, where tender crawfish are smothered in a silky, deeply seasoned sauce—rich with caramelized aromatics, gentle heat, and layers of savory flavor that soak beautifully into fluffy rice.
