Middle Eastern Feast


Chef Instructor Bridget Charters has been busy looking through her collection of Mediterranean cookbooks to create the menu for this class.  Zahav by Michael Solomonov, The New Book of Middle Eastern Food by Claudia Roden, and Istanbul and Beyond by Claudia Eckhardt all inspired the menu for this class! 

Start off with a taste of grilled Dahlia Bakery house loaf topped with sautéed greens and a flavorful pistachio-garlic pesto.  Learn all about dolmades and regional differences; dolmas is an over-arching word meaning “stuffed” or “filled” and Bridget will walk you through making Swiss chard dolmades.  Then, Bridget will demo one of her favorite dishes—Hortopita Pie—layers of phyllo dough brushed with olive oil, filled with a delicious mixture of veggies, herbs, and feta.  Enjoy tastes of everything that Bridget demos and then roll up your sleeves to make your own swiss chard dolmades. 

You can eat them in class, or we’ll pack up what you don’t eat so you can enjoy it at home.
