Goat Milk Ricotta Gnocchi Amatriciana

You’ve probably heard of the famous chef-owner of a couple of wonderful restaurants in Chicago. But that’s not who we’re talking about here.

We’re talking about another fabulous ‘girl and goats chef,’ our own Hot Stove Chef Ashley Ewing, who happens to love cooking with goat, whether goat milk, goat cheese, or goat meat.

Goat is a healthy and sustainable source of food, eaten widely around the globe.  Ashley wants to show you how to appreciate the depth, variety, and deliciousness you can achieve when you add goat to your repertoire.

Ashley has created a menu that features goat in every course. She'll show you how to make your own goat milk ricotta from scratch. Then she'll show you how to make goat milk ricotta gnocchi amatriciana (tomato, guanciale, and pecorino sauce).  You'll also learn how to make a slow cooked, full-flavored goat shoulder sugo served over handmade pasta. You’ll even enjoy goat for dessert-- as goat milk sherbet!

As you watch Ashley demo, you’ll enjoy substantial tastes of every dish. A glass of wine or beer is included.
