Learn the best loved Thai noodle dishes- hands-on!

We are excited to welcome Thai chef and cooking instructor, Srisuda Dougherty back to the Hot Stove Society. Throughout her years living in Thailand, Srisuda built an impressive resume of professional and educational culinary achievements.  During the time she has lived in the United States, Srisuda has been Curry Chef at the restaurant, Racha, and has taught classes for cooking schools such as The Pantry and the Book Larder, to list just a few of her accomplishments.

We’ll start you out with a welcome taste of ma hor, fresh pineapple with a caramelized shallot, minced chicken and prawn topping.

Then you’re going to learn how to make two of the best loved noodle dishes in Thai cooking hands-on: Pad Thai prawn (stir-fried Thai style noodle) and Pad see ew (stir-fried wide rice noodle with chicken). Not only that, but you also get the fun of making wide rice noodles (sen yai) from scratch!  Of course, you’ll enjoy eating the products of your labors.

Pad Thai is unique among Thai noodle dishes, many of which are Chinese in origin, because it was developed in Thailand with all Thai ingredients. Rice noodles are cooked in a sauce that balances sweet, sour and salty flavors. Prawns are stirred in along with chives, tofu, eggs, ground peanuts, shallots and sweet white radish. Then the dish is served with lime, bean sprouts and banana blossom. 

You’ll also learn how to make pad see-ew, a dish brought to Thailand by Chinese immigrants.  It is a sweet and salty stir-fry with wide rice noodles, Chinese broccoli, egg and black soy sauce. Thai people usually put condiments on pad see-ew like chili-powder, fish sauce, sugar and vinegar – so Srisuda will show you how to try it that way, too!

Srisuda will teach you about all the Thai ingredients used in class- where to buy them, how to prep them- and she'll show you all the techniques you’ll need to create these delicious and popular noodle dishes in your own home.

A glass of wine or beer is included.

What You’ll Learn and Eat:


  • Pad Thai sauce – learn how palm sugar, tamarind and fish sauce are blended to create the primary Thai flavors of sweet, sour, and salty and how to balance the flavors
  • Tapioca pearls with cantaloupe in chilled coconut milk (sa ku cantaloupe) - learn how to make syrup with a sweet aromatic base from pandan leaves


  • Make wide rice noodles (sen yai) for pad see ew
  • Learn the basic sauces used in Thai home cooking
  • Phad see ew- stir-fried wide rice noodle with chicken- learn how to prepare and how to stir fry this dish
  • Pad Thai prawn- stir-fried Thai style noodle- learn how to prepare (including learning and preparing over 10 ingredients) and how to stir fry this dish
