Summer is the time to celebrate wild salmon and halibut in the peak of the season. When available, our delicious local spot prawns are an incomparable summer treat. And although it’s not technically peak season for Dungeness, it’s a fact that people love to eat crab in the summertime. Chris Schwarz, Tom Douglas Restaurants Executive Corporate Chef, is the man who teaches our own line cooks, and he’s also the former chef, for many years, of our seafood house, Etta’s.  In other words, he’s the pro’s pro.  In this Summer Seafood class, he will teach you what you need to know to get the best from our region’s seasonal abundance.

We’ll start you off with a welcome cocktail- a Seabreeze slushy!  You’ll enjoy substantial tastes of everything Chris demos.  You’ll also learn how to make the perfect crab cake and go home with all the recipes.

What You’ll Learn and Eat: (demo only)

  • Spicy Lopez Island spot prawns with Newaukum cucumber and white bean gazpacho 
  • Neah Bay Dungeness crab with goat cheese gnocchi, sugar snaps, Walla Wallas and sweet cicily 
  • Alaskan halibut with corn and mascarpone dumplings
  • Etta's crab cake with charred jalapeño remoulade and garlicky greens
  • Whole roasted TK salmon with summer vegetable giardeniera and spicy tomato vinaigrette
