Scallopini is an Italian dish of thinly sliced and pounded cutlets of meat or poultry, such as pork, veal or chicken, dredged in flour, sautéed in butter, and often served with a pan sauce. You’ve probably enjoyed scallopini at your favorite French restaurant, but Chef Instructor Bridget Charters wants to show you how worthwhile it is to make this beloved Italian dish at home.  Why learn to make your own scallopini? For one reason, since the meat is thin, it cooks quickly for a super fast dinner.  Also, scallopini is delicious, elegant enough for company, and compatible with lovely flavors like lemon, wine, capers, sage, and prosciutto.

It’s not difficult to make scallopini, as long as you first master a few techniques.  Bridget will show you how to thinly slice cutlets and how to pound them, how to dredge, how to properly saute, and how to make a pan sauce.  Bridget will also show you how to make a related dish, the paillard, which is a piece of meat or poultry that’s pounded thin and grilled.

As Bridget demos you’ll enjoy substantial tastes of each dish.  You’ll get to make pork cutlet with a butter pan sauce hands-on, and enjoy eating what you make!
