Celebrate Chicory Week

Jackie Cross, “Farmer-in-Chief” of our Prosser Farm, is joined by Hot Stove Director Chef Lexi Ochoa for this special Sagra di Radicchio event. Inspired by the sagre (festivals usually honoring regional cuisine) of Italy, the Sagra di Radicchio, or Chicory Week, will be educational, delicious, social, and bitter in the best way.

Here in Seattle we are lucky to be surrounded by several farms growing this beautiful crop successfully. As they gain in popularity, taking a well-deserved place at the vogue produce table, chicories are still shrouded in an air of mystery: How to grow?  What varieties to choose? How to best prepare? Join us to get those questions answered at last.

Director Chef Lexi will demo the splendid chicory menu below. Enjoy substantial tastes of each dish while Jackie expands your horizons on the subject of genus chicorium.

What You’ll Learn and Eat: (Demo only)

  • Chicory salad with pickled grapes and goat cheese, topped with garlicky bread crumbs
  • Escarole and Manchego savory picnic bread
  • Radicchio hand pies with quince paste and blue cheese
  • Mixed greens (chicories, kale, spinach, arugula, and parsley), beans, and red chili flakes with Dahlia grilled bread
  • Slow roasted coppa porchetta with escarole served with radicchio risotto and roasted mushrooms
  • Chicory coffee and walnut financiers with coffee icing
