Here at Hot Stove, we are head over heels in love with the iconic Portland restaurant, Pok Pok, which first taught many of us to how to appreciate the flavors and textures of Thai food.  That’s why we are so excited to welcome Andy Ricker, superstar chef, James Beard Award winner, best-selling author, and owner of the Pok Pok restaurant group in Portland, Oregon to this class featuring his newest cookbook, Pok Pok Noodles.

Andy is the consummate storyteller. He splits his time between Chaing Mai, Thailand, and Portland, Oregon, which means he is deeply immersed in the culture and cuisine of Thailand, and he is eager to share that wealth of knowledge with you.  Andy will demo one dish, Khanom Jiin Naam Phrik, and you will enjoy a few different tastes and beverages (including drinking vinegars from Andy's Som Cordial line), but Andy’s focus for this class will be on telling you stories and talking about Thai ingredients.

What You’ll Learn and Eat:

Welcome Taste (no demo):

  • Mantou Muu Daeng: Chinese style BBQ pork served in pinch buns with sesame gravy (gravy is made from pork stock seasoned with sesame, soy, and sriracha) and cilantro
  • Singha Beer

Taste (no demo):

  • Luuk Chin Plaa Ping with Naam Im Kai: Grilled fish balls (made with firm white fish and shrimp, only lightly bound with starch) served with sweet chile sauce made fresh from red Thai chiles

Demo and Taste:

  • Khanom Jiin Naam Phrik: Rice vermicelli noodles with shrimp, coconut milk, and toasted mung beans- this Central Thai curry is seasoned with a deliciously aromatic, garlicky chile paste, and it includes the Burmese element of toasted, dried mung beans. It is served with an array of fresh garnishes
  • Som Cordial -- Pineapple Sichuan Peppercorn flavor with soda water and charred pineapple garnish (non alcoholic)
