Chef Chris Schwarz, the Corporate Chef of all the Tom Douglas Restaurants and the man who teaches our line cooks how to cook, knows Old School Italian first hand. Chris grew up in Maywood, New Jersey, a town with its share of Italian-American joints. Chris’s first cooking job was in a restaurant that served all the Italian-American classics plus steaks and seafood. Old School Italian is the kind of food Chris loves to cook, and the kind of class he loves to teach.
