Parchment Wrapped Seafood Spaghetti

Tired of the same-old, same old?  Try thinking about lunch in a whole new way and sign up for Lunch Club.  In the same hour that you usually spend chomping down a sandwich while you look at your phone, you can be seated at Hot Stove Society while Chef Instructor Bridget Charters cooks lunch for you!

For this edition of Lunch Club, Our Italy expert, Bridget, is going to show you how to prepare some beautiful seafood dishes, Tuscan style.  You’ll start out with a Mediterranean fish soup, then move to a fantastic spaghetti and shellfish dish that is finished by wrapping each portion in parchment and baking in the oven. The fun is when you open your packet at the table for a burst of fragrance from shellfish, tomatoes, garlic and basil! For dessert, Bridget is going to show you how to make a sweet green tart from Lucca which we’re betting is different from anything you’ve ever seen or tasted before.

Go ahead and treat yourself to a special way to go out for lunch. Better yet, find a buddy and make it a lunch date!

What You’ll Learn and Eat: (Demo only)

  • Cacciucco- a fish soup from Livorno, Bridget will make this with an assortment of Pacific Northwest fish and seafood, and the soup is enriched with tomatoes, rustic bread, and olive oil
  • Spaghetti al Cartoccio- this local seafood specialty from Viareggio is made with an assortment of seafood such as clams, mussels, and prawns plus olive oil, garlic, tomatoes and basil and includes an interesting technique- the sauced spaghetti is wrapped in parchment and finished by baking in the oven!
  • Torta di Verdure- this sweet tart, a specialty of Lucca, is made with zucchini, spinach, chard, pine nuts, and raisins, and the filling is sweetened with sugar and sweet spices
