Prosciutto and Asparagus Bundles

Tired of the same-old, same old?  Try thinking about lunch in a whole new way and sign up for Lunch Club!  In the same hour that you usually spend chomping down a sandwich while you look at your phone, you can be seated at Hot Stove Society while Chef instructor Bridget Charters cooks lunch for you!

It’s April and the start of the peak season for one of Bridget’s favorite vegetables- asparagus! For this lunch club Bridget will show you a few ways to prepare those beautiful green spears.  You’ll learn how to make an Italian marinated asparagus salad with a garnish of sieved hard-boiled eggs. You’ll also learn how to make delicious bundles of asparagus wrapped in prosciutto and oven roasted.  For dessert, Bridget will show you a panna cotta recipe from Portland’s famed chef and cookbook author Jenn Louis. The panna cotta will be served with spring rhubarb, poached in vanilla syrup.

Go ahead and treat yourself to a special way to go out for lunch. Better yet, find a buddy and make it a lunch date!

What You’ll Learn and Eat: (Demo only)

  • Italian asparagus marinati salad- marinated green and white asparagus with hard-boiled egg dressing
  • Prosciutto and asparagus bundles served with farro risotto and watercress salad
  • Jenn Louis’s panna cotta with vanilla poached rhubarb
