Summer Risotto with Baby Artichokes and Peas

Tired of the same-old, same old?  Try thinking about lunch in a whole new way and sign up for Lunch Club.  In the same hour that you usually spend chomping down a sandwich while you look at your phone, you can be seated at Hot Stove Society while Chef Instructor Bridget Charters cooks lunch for you!

For this edition of Lunch Club, Our Italy expert, Bridget, is going to show you how to make authentic Italian risotto. This infinitely adaptable, traditional Italian dish is a great recipe to master because you can vary it with seasonal ingredients all year long. Bridget will start you off with a  wonderful treat of battered and fried fresh sage leaves stuffed with anchovies, and you’ll end with a traditional Italian jam tart made with jam from our own Pacific Northwest strawberries!

Go ahead and treat yourself to a special way to go out for lunch. Better yet, find a buddy and make it a lunch date!

What You’ll Learn and Eat: (Demo only)

  • Sage involtini- fresh sage leaves stuffed with anchovies, dipped in an egg-flour batter and fried
  • Risotto with baby artichokes and peas- drizzled with basil pesto (inspired by Lynn Rosetto Kasper’s The Splendid Table)
  • Italian jam tart- with jam from our local strawberries and a traditional sweet short lattice crust
