Salade Nicoise

Tired of the same-old, same old?  Try thinking about lunch in a whole new way and sign up for Lunch Club.  In the same hour that you usually spend chomping down a sandwich while you look at your phone, you can be seated at Hot Stove Society while Chef Instructor Bridget Charters cooks lunch for you!

For this edition of Lunch Club, Bridget, is going to show you how to make the salad you will want to eat all summer long-  a perfect Salade Niçoise.  Niçoise traditionally includes tuna, and Bridget will show you how to prepare tuna two different ways. You’ll learn how to put fresh albacore tuna in a jar with lemon, thyme, olive oil, salt and pepper, then poach it in a hot water bath in the oven.  This tuna will be served on toasted bread (as a tuna tartine) for your first course (though at home you could certainly use this poached tuna in your Niçoise salad.) For the main course, Bridget will show you how to sear fresh tuna and how to assemble all the classic elements for the salad.  For dessert, Bridget will show you how to make a French frangipane tart with summer plums.

 Go ahead and treat yourself to a special way to go out for lunch. Better yet, find a buddy and make it a lunch date!

  • Lemon and olive oil oven-poached tuna tartine
  • Salade Niçoise with seared albacore tuna, haricot verts, small potatoes, hard boiled eggs, vine ripe tomatoes, and French vinaigrette
