Lunch Club- Favas

Lunch Club- Favas

Handkerchief pasta with fava beans

Tired of the same-old, same old?  Try thinking about lunch in a whole new way and sign up for Lunch Club!  In the same hour that you usually spend chomping down a sandwich while you look at your phone, you can be seated at Hot Stove Society while Chef instructor Bridget Charters cooks lunch for you!

An ancient member of the pea family, fava beans are the traditional rite of spring for Italians and other Mediterranean cultures. Americans are less familiar with these delicious beans. Once you remove the outer skin, fresh fava beans are beautifully emerald green in color with a nutty taste and a creamy texture. Bridget is going to show you a couple of exciting ways to prepare them.

Go ahead and treat yourself to a special way to go out for lunch. Better yet, find a buddy and make it a lunch date!

What You’ll Learn and Eat: (demo only)

  • Fried crostone with fava beans- large croutons of bread fried in extra virgin olive oil, rubbed with garlic and topped with fava bean puree and whole fava beans
  • Fazzoletti with spring greens and fava bean sauce- handkerchiefs of fresh parsley pasta filled with lemony ricotta and topped with a sauce of butter, stock and fava beans
  • Rustic meringue cake with a strawberry cream filling
