Cotechino with Lentils

Tired of the same-old, same old?  Try thinking about lunch in a whole new way and sign up for Lunch Club!  In the same hour that you usually spend chomping down a sandwich while you look at your phone, you can be seated at Hot Stove Society while Chef instructor Bridget Charters cooks lunch for you!

For this edition of lunch club, Bridget was inspired to come up with this menu by Helen Barolini’s cookbook, Festa, a wonderful book about the foods of festivals and holidays in Italy. Cotechino is a large Italian pork sausage, boiled at low heat for several hours. It is served with lentils for New Year’s Eve because lentils are supposed to bring good luck and money for the coming year. In Italy, this is a classic dish to serve for Epiphany, which closes off the holiday season and is the last chance to feast and celebrate!

Start lunch with a traditional celeriac (celery root) salad, and finish with a sweet, moist, and fragrant cardamom bundt cake.

Go ahead and treat yourself to this special way to go out for lunch. Better yet, find a buddy and make it a lunch date!
