Sagra di Radicchio

This is Sagra di Radicchio or Chicory Week, so for this edition of lunch club, Hot Stove Director Chef Lexi has created a very special menu. The Sagra di Radicchio is a festival celebrating chicories in the Pacific Northwest. Inspired by the sagre (festivals, usually honoring regional cuisine) of Italy, this is a food festival that will be educational, delicious, social, and bitter in the best way.

What are chicories? This is a diverse family of bitter greens in the cichorium genus. Named for villages around the Veneto where they are grown, chicories are colorful, sweet, and bitter, and they lend a unique flavor to any dish.

Lexi has pored through some of her favorite cookbooks, such as Yotam Ottolenghi’s books and Jenn Louis’s The Book of Greens to come up with this exciting menu.

  • Ottolenghi’s Bitter Salad: Radicchio, Treviso, orange, pomegranate, fresh ricotta, and pine nuts
  • Savory tart of Pan di Zucchero (a large loaf-shaped chicory) and apples with tarragon and honey
  • Baked beignets with chicory coffee sauce
