Italian Summer Grilling

Cook the whole meal outside!

Hooray for summer!  Chef Instructor Bridget Charters has a theory. If you’re going to fire up the grill, why not stay outside and cook the whole meal? Bridget will show you how to make an Italian style dinner with everything cooked on the grill from appetizer to vegetables to main course to dessert. 

Did you ever try grilling tomatoes? What about potatoes? We mean raw, sliced potatoes and, yes, it can be done- Bridget will show you how.

Why make a whole grilled fish? Because it’s fun, and it’s a great dish for entertaining. Bridget will show you a few ways to cook the fish, both on the grill and flash roasted in the oven.

Bridget will demo the grilled tomatoes, the whole grilled fish, and the grilled peaches, and you’ll be served all three together as a light dinner. Then you’ll get to roll up your sleeves and make the grilled piadina with soft cheese and the grilled eggplant with lemon oregano sauce hands-on. You can enjoy eating the piadina in class, and we’ll pack up your eggplant dish to take to enjoy at home.

A glass of wine or beer is included.

What You’ll learn: demo and hands-on

  • Grilled Piadina with Soft Cheese- Piadina is a thin Italian flatbread from the Romagna region. Work on the griddle to grill the flatbread, then add cheese on top, and enjoy eating in class
  • Grilled Eggplant with Lemon Oregano Sauce- grill the eggplant and make the lemon oregano sauce, and we’ll pack it up for you to take home
