Eat dessert like an Italian!

Chef-Instructor Bridget Charters loves the Italian way with desserts because they tend to be straightforward and easy to execute, not too rich, and with just the right amount of sweetness. There’s no better companion to an after dinner or afternoon espresso than one of these desserts, though we wouldn’t say no to a glass of Vin Santo!

While you watch Bridget demo, you’ll enjoy substantial tastes of each dessert, then you’ll get to roll up your sleeves and make the amaretti stuffed peaches and the summer berry galette hands-on. We’ll pack up your galette for you to take home.

A glass of wine is included.

What You’ll Learn: demo and tastes

  • Panna cotta with poached summer fruits- this creamy Italian custard is even better surrounded with luscious summer fruits- Bridget likes to make a large panna cotta (rather than individual size) to unmold on a platter for a dramatic presentation
  • Melon Granita- Bridget will show you how to make this icy, refreshing dessert with peak season melons
  • Apricot polenta upside down cake- Fresh apricots are Bridget’s favorite fruit. They don’t give off too much liquid while baking which makes them a great choice for upside down cake
  • Peaches poached in white wine- there’s nothing better than a perfect summer peach, unless it’s a perfect peach gently poached in white wine and sugar the way the Italians do it! Serve with ice cream, Zabaglione, or whipped cream for a dessert that is simple but elegant

What You’ll Learn: demo and hands-on

  • Amaretti Stuffed Peaches with Zabaglione -demo and hands-on- Peaches are stuffed with crushed amaretti cookies, butter,and sugar, then baked. You could serve this classic Italian dessert with scoops of ice cream, but, for another option, Bridget is going to show you how to make a creamy, foamy, boozy sauce called Zabaglione (the sauce is demo only).  You’ll get to stuff and bake the peaches, hands-on, to eat in class or take home
  • Summer Berry Galette with Whipped Cream- build and bake a galette (which is a rustic tart with a sweet short crust) and take it home to enjoy
