How to Cook a Fish: Outside!

In the summer, you're eager to fire up the grill and cook dinner outside, right?  If you’re lucky enough to have a garden, you can pick your salad and herbs right out of the yard, if not, everything you need is fresh and seasonal at the farmers market.  You want dinner to be summertime bright, lively, light, and most of all, cooked outside!

Fortunately, Chef Instructor Bridget Charters is here to show you all the tricks of the trade for cooking fish outside, perfectly.  You’ll learn some ideas for using our ever popular wild salmon, ocean run fish like marlin and mahi mahi, whole fish like trout, and local Pacific Northwest fish like Washington rockfish.

Bridget will also talk to you about a range of subjects such as how to cook salmon on a plank, how to grill fish on a piece of foil (to protect more delicate fish or keep fish skin from sticking), how to grill fish over branches of fresh rosemary, and how to grill whole fish, fillets, and sides of fish.  You’ll even learn about  the special salt made from fresh rosemary, fresh sage, and fresh fennel seeds that Bridget whips up and uses for grilled food all summer long.

As you watch Bridget demo, you’ll enjoy substantial tastes of each dish, and you’ll go home with all the recipes so you can get outside and cook fish this summer!

What You’ll Learn: (demo only)

  • Spice Rubbed Grilled Salmon- skin on and grilled. Bridget will show you how to lift the fillet off the skin after the fish is cooked. Then transfer the warm fish right on top of a platter of fresh-from-the-garden salad.
  • Grilled Marlin- This ocean-run fish is grilled and served in a fun Mexican style with corn tortillas, guacamole, and tomatillo salsa
  • Whole Trout- Learn how easy it is to cook a whole fish! Whole trout are stuffed with sliced onions, minced garlic, and branches of rosemary, then wrapped with thinly sliced pancetta and grilled
  • Grilled Mahi Mahi- imagine you’re on a Hawaiian vacation with grilled fish, a tropical mango salsa, and an Asian napa cabbage slaw
  • Grilled Rockfish- Bridget will show you how to serve the grilled fish over a bed of grilled zucchini and grilled potato slices (yes! You can grill potato!). After grilling you’ll hit the still-warm vegetables with a flavorful marinade that they’ll soak up to become super delicious!  Garnish the rockfish with an Italian fresh tomato salsa.
