A Holiday Classic

In this hands-on class, Chef-instructor Bridget Charters, who spent years living and working in Italy, will show you how to make beautiful holiday raviolis—a tradition in Italy and in America for Italians to gather a few days before Christmas, usually Nonna’s or one of the Aunt’s.  As everyone gathered, dough was made, filling put together, and the whole family rolled and filled pasta around the big dining table.  Sharing the task of making the sauce, pasta sheets, and filling strikes much more of a festive and communal holiday element than a mere bird or roast could offer. 

You’ll watch Bridget demo two kinds of ravioli—squash & amaretti, and ricotta & herb—and you’ll enjoy substantial tastes of the sauce raviolis. Then you’ll roll up your sleeves and make your very own cheese filled ravioli.  We will box up your ravioli for you to cook at home or freeze for later.

A glass of wine or beer is included.

  • How to sheet, fill, and form ravioli
  • Discussion of regional filling differences
  • How to make a classic cheese filling of ricotta, mozzarella, parmeggiano, pecorino, herbs, and eggs
  • How to make a classic squash filling of roasted butternut squash nutmeg, parmeggiano, and eggs
  • How to make appropriate sauces for ravioli—tomato and brown butter-sage

Hands-On:

  • How to make ravioli pasta dough (flour, eggs, and olive oil)
  • How to sheet, fill, and form ravioli
