Summer is winding down, but there’s still enough beautiful weather ahead for dining al fresco.  Whether you’re throwing a blanket on the grass, setting the table on the patio or deck, or even pretending to have a picnic indoors, what could be more appealing than fried chicken?

Fried chicken is still one of the hottest food trends around. Of course, you can order fried chicken at many restaurants and fast food joints, but it’s much more fun to learn to make superb fried chicken in your own kitchen. Chef Eric Stover knows all the tricks to making crackling-crisp, delicious fried chicken, and he’s here to show you how, including how to brine chicken using a Southern style pickling brine, how to dredge in a well seasoned flour-cornstarch mixture, and how to fry so the breading is golden brown and the chicken is cooked through.
