How the French make a Pique-Nique!

Summer is in full swing, which means our thoughts naturally turn to dining al fresco. We’re talking about throwing a blanket on the grass, opening a bottle of wine, and having a picnic! Who better to show you how to prepare an elegant French Country picnic than our guest instructor Chef Shawn Applin of Seattle’s modern French restaurant, RN74? And if you don’t want to eat while sitting on a blanket, this splendid meal is worthy of setting a beautiful table whether it’s on the deck, in the garden, or in the house!

Shawn’s career has included cooking at some of the best restaurants in both Seattle and San Francisco, such as Flying Fish, Fog City Diner, Scala’s Bistro, and Sazerac in the Hotel Monaco.  When Shawn became chef of RN74 in Seattle, he got the chance to hone his French techniques while working with one of his culinary inspirations, super star Chef-Owner Michael Mina.

Shawn will show you how to prepare a picnic menu that will wow your family and friends, starting with salmon rillettes, a rich, smooth paté made from fresh salmon. Next, he’ll demo a classic tuna Niçoise salad, plus a beautiful tart made with peak summer tomatoes and fresh goat cheese, and finally, one of the best loved French desserts- lush chocolate pots de crème.  You’ll enjoy substantial tastes of everything Shawn demos. 

After the demo, you’ll get to roll up your sleeves and make both the tomato tart and chocolate pots de crème, hands-on. You can eat your picnic treats in class, or we’ll pack them to take home.
