We are happy to welcome back our Tom Douglas Corporate Executive Chef, Chris Schwarz, to teach another class! Chris has years of experience under his belt, including a long stretch as Etta’s Chef, so this man knows his way around Pacific Northwest seafood and shellfish. 

Chris will talk about and show different types of clams, mussels, and oysters.  He will bring in an array of oyster and shellfish varieties from Penn Cove such as Pacific, Olympia, kumomoto style, and flat/Belon, as well as a few mussels and clam varieties

Chris will start his demo with a twist on the classic Oysters Rockefeller so you can enjoy tasting one with a glass of sparkling wine! You’ll enjoy tastes of everything Chris demos and get to go home with his amazing recipes.

A glass of bubbles included.

Demo Menu:

  • Roasted Penn Cove oysters with Pernod Butter, Spinach, and Bacon
  • Creamy Clam chowder with Parsley Oil and Brown Butte Croutons
  • Etta’s Northwest Seafood Stew with Coconut Milk—chock full of fish and shellfish including clams, mussels, and crab, garnished with toasted chili sambal, lime, and fresh herbs
  • Penn Cove Mussel Chowder with Saffron Rouille and Thyme Crostini
  • Steamed Samish Bay Clams with Chinese Sausage, Chiles, Sum Choy, and Cara Cara Orange
