Tantalizing Tacos!

Are you crazy for tacos? Do you feel the urge to pull the car over whenever you're intrigued by a taco truck? Our Hot Stove Sous Chef Lexi loves tacos and seems to always have her nose buried in the latest Mexican cookbook. In this class she’s going all out to show you how to make a wide variety of tacos (including how to make the tortillas) from different regions of Mexico (plus a taco inspired by Thailand!) as well as a variety of made from scratch salsas, other sauces and condiments, nachos, and even a Mexican ice cream cone! 

We’ll welcome you with a taste of boozy salsa borracha (sometimes called ‘drunken salsa’) with quesadilla.  As you watch Lexi demo, you’ll enjoy substantial tastes of every dish. Of course, you’ll go home with all the recipes, so you can start planning your next taco party.

A glass of wine or beer is included.

What You’ll Learn and Eat: (demo only)

  • Cantina Cadillac nachos with black beans, fundito, carnitas, pico de gallo, guacamole, pickled onions- these are the lush, over-the-top nachos we never get enough of from our own Cantina Leña!
  • Blistered shishito peppers with salsa macha and crumbled cotija- salsa macha is an unusual salsa made from dried chiles, nuts, and sesame seeds that comes from the state of Veracruz.
  • Mojo de ajo shrimp tacos on a saffron tortilla and shaved cabbage slaw- once you learn to make mojo de ajo- a delicious sauce of garlic, olive oil, lime juice and salt, it will become a staple in your house for seasoning just about everything. Lexi will also show you how to make the saffron tortillas from scratch.
  • Tacos al Pastor with charred pineapple on a corn tortilla with Yellow Indian beans in a savory broth- traditionally, tacos al pastor are made with crisp, shavings of vertical spit-roasted marinated pork. Lexi will show you how to make this classic at home.
  • Thai beef larb tacos with serrano, lemongrass, and cilantro and spicy chile sauce on a corn tortilla- here’s an exciting take on the Mexican taco- try filling your tacos with spicy Thai minced beef salad.
  • Chocolate dipped corn tortilla cones with dulce de leche ice cream sprinkled with guajillo powder- top it all off with a sweet taste of the best ice cream cone you ever had- Mexican style!
