A Gorgeous Late Summer Early Fall Menu matched to Artisan Ciders!

The fall season is right around the corner. Why not celebrate by tasting some spectacular ciders from Alpenfire Cider, an artisan cidery based just outside of Port Townsend featuring estate grown heritage ciders.  What puts this event completely over the top is that each cider will be matched to a course in a fabulous five course dinner!

Executive Chef Chris Schwarz, one of our most experienced chefs and the man who teaches our line cooks how to cook, will be here to demo this gorgeous menu which showcases all the deliciousness of late summer and early fall. A member of the Alpenfire team will be here to talk about each of the pairings as you enjoy eating and sipping. (Cider pairings are included in the price of the class.)

Dinner and Demo:

  • 1st – Trail Cider paired with Cider Braised Berkshire Pork Ribs shiro plums, spicy greens, pickled blueberry vinaigrette
  • 2nd Course – Traditional paired with Smoked Rabbit Rillette bitter greens, cascade huckleberries, hot pepper mustard, brioche toasts
  • 3rd Course – Glow Cider paired with Salish Sea Halibut Crudo pickled late summer peaches, Prosser peppers, charred citrus, black pepper oil
  • 4th Course – 3 Pommes paired with Spiced Honey Duck Breast wild pear and potato risotto, wilted endive, late season apple chutney, speck, fennel honey
  • 5th  Course- Dessert – Rosy Pommeau paired with Collins Family Orchards Apple Terrine valdeon blue, dates, marcona almonds, chive oil
