A Dinner with Julia!

Julia Child, by way of her cookbooks and her PBS cooking shows, is renowned for bringing sophisticated French cooking into American home kitchens.  Jim has created a menu that’s an homage to our favorite culinary icon, Julia Child.  He is using Julia’s recipes as inspiration as he cooks his way through the PNW growing seasons!

You will be greeted with a tasty bite featuring gougères and salmon mousse and a French 75 cocktail.  Jim will take you through the steps of whipping up the perfect hollandaise sauce.  And what better accompaniment than Crawford Farms Asparagus?  We are right at the start of spring when asparagus is perfect!  Jim will share tips and tricks on how to create the perfectly tender and juicy braised pork.  Finish off the meal with a sweet slice of cherry clafouti—essentially pancake batter poured over fruit and then baked…a classic that never gets old!

What You’ll Learn and Eat:

Demonstration Only:

  • Gougères with salmon mousse – classic pate choux dough, baked to perfection, served with creamy salmon mousse
  • Soupe A L’Oignon – classic French onion soup served with a slice of Dahlia bakery baguette and gruyere
  • Grilled Crawford Asparagus with Meyer Lemon Hollandaise
  • Gratin Dauphinois – Thinly sliced potatoes baked with milk and cheeses
  • Porc Braise Aux Choux Rouges – Tender, juicy braised pork with red cabbages and jus
  • Cherry Clafouti a la Liqueur – Cherries macerated in liquor before used to make a the classic clafouti
