Inside 5 Days of our "Culinary Camp"

The Mission: plan, prepare, and serve a 5-course meal with wines to 70 of your friends and family. A.K.A. Operation Dinner Party.

Students, or “campers” as we endearingly call them, spent 5 intensive days cooking, learning, and ultimately forming a dinner for their friends and family. The final dinner was a culmination of everything they learned and all of their hard work! Throughout the week, different guest chefs arrived to teach, and the students practiced alongside. They practiced breaking down a salmon with Tom, making sponge cake with Pastry Chef Antoine, and making rillette with Palace Kitchen chef Dezi. When the final dinner came, they divided into teams to plate each item for their guests down in Hotel Andra’s “Northern Lights” ballroom space, then sat and enjoyed with their guests while wines (that they picked to pair) were served. At the end, they celebrated with champagne and karaoke up at Hot Stove!
