The Hot Stove Society invites you to join us for a special event - HarvestIntensive 2015.

This is a four day food-focused immersion on the theme of Fall Harvest. Topics to be investigated with great relish include: food science and cooking myths/fall plants, mushrooms, and grains/ butchery and smoking/ and pickling and fermentation with emphasis on the Korean/Asian aesthetic (which means: you can anticipate demos by some of the hottest Asian chefs in town!) In addition, very serious attention will be paid to the subjects of wine and cocktails.

Along the course of the ‘immersion,’ expect back-to-back demos by top restaurant chefs from the Seattle area and Pacific Northwest, including several from the Tom Douglas Restaurants chef team. Watch the pros at work while you enjoy a multitude of delicious tastes and sips. The itinerary is still under construction, but here’s a glimpse of what’s in store for you:

  • J. Kenji Lopez- Alt of The Food Lab, the nerdy superstar of food science, will blast through every Steak Myth of conventional cooking wisdom
  • Charles Smith and Brennon Leighton of CharlesSmith Wines and K Vintners face off against our own Tom Douglas and Eric Tanakafor the Rock n Roll- Battle Royale- Cooking Competition of the Year!
  • Dezi Bonow of the brand new Carlile Room will show you the coolest ways to prepare Fall Plants
  • …and so much more!

The Hot Stove Society classroom will be your home base, but we’ll also get you out and about on the Tom Douglas “campus” and beyond- including a night-out dinner and a market excursion so we can explore Seattle deliciousness together.

The curriculum starts Monday morning, September 28th and runs through Thursday, October 1. A typical day starts at 8:30am with breakfast at the Hot Stove Society and ends at 5:30pm with cocktails and friendly banter.
