Chicago Love
Last night Chef Instructor Herschell or as we call him “Tweets” shared his Chicago Love at class.
Herschell is from Chicago and showed us how to make your own personal deep dish pizza at home.
Even though we are clearly a Seahawk town he got us in the spirit by playing the Chicago Bear’s Superbowl Shuffle video as we listened to Buddy Guy with some Chicago Blues.
Then we got our hands dirty!
Here is his Chicago Style Deep Dish Pizza Dough Recipe:
Makes about 10 personal deep dish pizzas or 1 large 12’’ deep dish pizza
- 905g All purpose flour
- 225g Semolina
- 215g Oil
- 680g Water
- 8g Yeast
- 8g Salt
- 4g Sugar
- A pinch of Ground Tumeric
- Butter for bowl
Bring the water to warm water between 105-115 degrees farenheit. Add yeast and let it bloom for a few minutes. You should see it bubble a bit.
Combine the oil, water and bloomed yeast in a mixer.
Combine all the AP flour, semolina, salt, sugar and turmeric together.
Add dry ingredients to wet ingredients and using a dough hook, mix the dough until just combined. There should be no more AP flour visible.
Pour mixed dough on a floured workspace. Fold your hands about 8-10 times until barely combined.
Grease a large bowl with butter and let set with plastic wrap on top overnight
Chicago Style Deep Dish Pizza Assembly
Divide into 8oz. portions or one large ball
Form into buttered pan or pans (limit to 2 or 3)
Fan low moisture mozzarella on top
Top with sauce
Cover with foil and bake in a 350 degree oven for 30 minutes
Remove foil, brush with melted butter and bake for another 15 minutes until…G.B.D. (you know Golden Brown and Delicious)
Top with grated cheese and enjoy some Chicago Love!
