It’s the first thing culinary students learn—how to hold your knife and the basic kitchen cut—oblique, julienne, dice, slice, chop, cube, skin, supreme, and chiffonade. Knowing how to handle a knife in the kitchen makes your cooking more efficient, keeps the food looking fresh and beautiful, and most importantly, makes it safer in the kitchen.

In this quick “lunch-break” class, students practiced cutting potatoes and onions. Even practicing for an hour increases your efficiency in the kitchen exponentially!
