Anyone who knows Tom Douglas knows that one of his top favorite things to eat is a well roasted duck with rich, tender meat and crisp skin. Tom loves everything about duck including picking the roasted duck meat off the carcass to make a crispy-edged duck hash with duck skin cracklings, saving the luscious duck fat for frying potatoes, and picking up a Chinese BBQ duck in the ID.

What else does Tom love? He loves disco and dance contests! So he put the duck and the disco together for this crazy-special -sold-out class at the Hot Stove Society last night (last Wednesday night).

Tom showed the class mates how to slow roast a duck, carve it, and make a pan sauce for it, how to sear a duck breast and the difference between Muscovy and a Pekin duck breasts, and how to put deep flavor into soup broth by adding the pulled meat from a Chinatown BBQ duck.

All of this Douglas duck education was set to the disco beat provided by the playlist of Tom Douglas Restaurants DJ and Social Media expert Herschell Taghap, which included hits from Michael Jackson, Diana Ross, Bee Gees, and many more plus video footage from Kung Fu Hustle! The lucky dance contests winners got a free dinner for two at the Dahlia Lounge!
