Dorie Greenspan wowed us at the cooking demo and book signing she did for Hot Stove last week. Dorie is the consummate pro, and she’s a adorable, too! The afternoon was a complete delight. In addition to information-packed demos of three recipes from Dorie’s newest cookbook- Baking Chez Moi-

...there were delicious bites to eat, wine and bubbles to sip on, and amusing anecdotes by one of the biggest national stars of the cookbook firmament. Dorie can not only bake like a goddess, she can pack your brain with info on topics like the difference between French and American butter and which salt to use for baking.

Of all the delicious bites, the one that rocked our world was this innocent little crackle top cream puff. A disc of raw cookie dough is placed atop each little mound of pate a choux, and after the cream puffs are baked they have this amazingly textured crackle top! The puffs were filled with pastry cream that had been lightened with whipped cream. This made a heavenly little bite of lush, creamy filling and crisp, crackly shell.
